Strawberry Spinach Salad

This sweet and savory salad is a treat the whole family will love!  It’s perfect for holiday meals and is a great way to get in some of the vitamins that keep your eyes feeling healthy and seeing well. 

Ingredients:

  • 10 oz baby spinach
  • 1 lb fresh, sliced strawberries

  • 5oz feta cheese

  • â…“ small red onion, sliced

  • ¼ c. chopped pecans

  • 1 ½ tbsp brown sugar

  • ½ tbsp butter

  • ½ cup balsamic vinegar

  • ½ cup olive oil

  • 2 tbsp honey

Instructions:

Melt butter in a pan over medium-high heat. 

Add pecans, brown sugar, a pinch of salt, and toss until coated. Remove from heat and spread on parchment paper to cool

Wash and dry your produce.  Spread spinach on a clean towel to dry. Slice and core strawberries.  Slice your onion.

In a bowl, combine the olive oil, balsamic vinegar, and honey.  Stir until combined. Salt and pepper to taste.

Combine all ingredients in a large salad bowl and toss until mixed.

Tip: add diced green apples, almond slivers, or tomatoes for an additional yummy treat.

Vanilla Almond Cookie Tea

Looking for a refreshing taste to add to your Christmas day celebrations? This iced tea recipe offers the perfect blend of tart and sweet. It’s a great pairing for all those leftover sugar cookies that Santa didn’t eat. 

Ingredients:

  • 4 tea bags of your choice — Black tea is recommended

  • 1 can frozen lemonade mix

  • 2 tsp almond extract

  • 1 tsp vanilla extract

  • 1 cup sugar

Instructions:

Add tea bags to a large pitcher.  Bring 8 cups of water to a boil and pour over tea bags.

Stir in sugar until dissolved.

Add in lemonade mix and stir until dissolved, then add vanilla and almond extracts.

Fill the rest of your pitcher with cold water and set in the fridge to chill for 2 hours.

Serve over ice.

Cake Mix Cookies

Need a quick cookie fix? These cookies only require three ingredients and take almost no time to make!  All you need is your favorite cake mix, Cool Whip, and an egg!

Ingredients:

  • 1 box cake mix of your choice — We recommend trying: birthday cake, spice cake, red velvet, german chocolate, and/or lemon.

  • 1 egg

  • 1 tub of thawed Cool Whip

  • Powdered sugar for topping

Instructions:

Preheat your oven to 350 and grease a cookie sheet.

Combine your cake mix, egg, and Cool Whip in a bowl.

Form into 2 tbsp balls and place on your cookie sheet.

Bake for 10-12 minutes.

Allow to cool and sprinkle with powdered sugar.
